As a result, the place name may not have been directly derived from Quintus, but from the name Quintius (which itself is ultimately derived from Quintus). This seems feasible, if you also look at the forms of Quintius in other languages:
The French form of the name should be Quince (or perhaps even Quincy), seeing as Latin names ending in -tius usually become -ce in French. However, I can't find much evidence of the French form so far.
Either way, it might be worth considering that the name Quintius might have been involved along the way of derivation for the (sur)name Quincy.
